480 - Menu Planning

This class is an overview of the fundamentals of Menu Planning . It will include: what is menu planning; the federal rules and regulations affecting Menu Planning, including the meal patterns for breakfast and lunch; factors both internal and external that affect menu development; different types of menus that can be used, how to use the Food Buying Guide, and looking at labor when preparing menus. The participant will be expected to create a 1 week lunch menu at the end of the class which will meet  the meal requirements  and will determine the average cost for the week.
